• 2 cups plain flour
  • 1 tsp baking soda
  • ½ tsp coarse salt
  • 1 ¾ cups sugar
  • ¼ cup packed brown sugar
  • 1 tbsp finely grated lemon zest
  • 250g unsalted butter (room temperature)
  • 2 large eggs
  • 1 tbsp freshly squeezed lemon juice
  • Demerara sugar for sprinkling


  1. Preheat oven to 180˚C. Mix flour, baking soda and salt in a bowl.
  2. Combine both sugars and the zest together until well mixed. Add butter and beat until pale and fluffy. Mix in the eggs one at a time, then the lemon juice. Gradually stir in the flour mixture until well combined.
  3. Using a large spoon, scoop the dough onto grease-proof paper lined baking trays spacing about 5cm apart. Flatten each slightly and sprinkle with demerara sugar. Lightly brush with a wet pastry brush and sprinkle with more demerara sugar.
  4. Bake for 15 mins or until golden.
