Spring Vegetable Risotto with Lemon and Peas

Serves: 4

Prep time: 10 minutes

Cooking time: 25 minutes

You will need

  • Talking scales or measuring jug for accurate measuring
  • Accessible timer or talking microwave/oven for cooking
  • Non-slip chopping board to keep vegetables steady
  • Liquid level indicator for safe pouring

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, crushed
  • 300g arborio or any other medium-grain rice
  • 1 litre hot vegetable stock
  • 150 g frozen or fresh peas
  • 1 courgette (zucchini), diced
  • Zest and juice of 1 lemon
  • 50 g grated parmesan (optional)
  • Fresh parsley or mint, chopped, for garnish

Method

  1. Heat olive oil in a saucepan.
  2. Add onion and garlic; cook until soft (use your talking timer to track 3–4 minutes).
  3. Stir in the rice until coated.
  4. Add one ladle of hot stock at a time, using your liquid level indicator when pouring. Stir until absorbed before adding the next ladle. Continue for around 18–20 minutes.
  5. Add peas and courgette; cook for another 5 minutes until tender.
  6. Stir in lemon zest and juice, and parmesan if using.
  7. Season with salt and pepper. Serve topped with fresh herbs.

Tip: If you prefer extra brightness, squeeze a little more lemon juice over each serving just before eating.
